Can you live on nutballs alone? The toddler says YES!

We weened Oscar off of the bottle a few weeks ago and since then he demands nutballs first thing when he wakes up in the morning.  Nutballs are a completely reasonable breakfast, but they are a bit cumbersome to have on hand.  He eats about 8-12 of these every morning.  So we make a couple of batches a week.  He also like to help "make" them with us.  He helps a little and eats a lot!  

I like them too and it is fun to have him cook with me.  I only got pictures of the end of the process, but Oscar puts the ingredients in the food processor and pushes the on button.  


 


Recipe
1 cup almonds
2 Tbs. Rolled Whole Oats
Grind in a food processor until fine like flour (it will be moist and not dusty)

Add
1 cup of dates
1/4 cup of raisins
1/4 cup of almond butter (you could use peanut butter)
2 Tbs of maple syrup
1 tsp cinnamon
Process until ingredients are fine and start to come together.

Roll into individual balls.  

(I sometimes need to adjust by adding another date to make it come together more.)

ENJOY!  Great for adults and kiddos alike and they are pretty healthy too!

I think we need a better name for these treats....any ideas?
